Ingredients:

– 1 large egg

– 1 rice paper sheet

– 1 ts chilli oil

– 1 stick Green spring onion 

– 1/4 cup shredded cheese (optional)

– Salt and pepper to taste

– Fillings of your choice (such as diced vegetables, cooked ham, spinach, mushrooms, etc.)

– Cooking oil spray

Instructions:

1. In a bowl, beat the eggs and season with chilli oil, spring onion salt and pepper.

2. Heat a non-stick skillet over medium heat and lightly spray with cooking oil.

3. Pour the beaten eggs into the skillet and swirl to spread evenly, creating a thin omelette.

4. Cook the omelette until the edges start to set and the bottom is lightly golden, about 1-2 minutes.

5. Carefully place the soaked rice paper sheet on top of the omelette, pressing down gently to adhere.

6. Sprinkle the shredded cheese (if using) over the rice paper sheet.

7. Add your desired fillings evenly over the cheese layer.

8. Using a spatula, carefully fold the omelette in half, covering the fillings with the rice paper.

9. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is cooked through.

10. Slide the omelette onto a plate, cut into slices, and serve hot.

You can customize the fillings to suit your taste preferences for a satisfying breakfast or brunch option.
